Basic Sugar Cookie Recipe
- 3 C sifted flour
- 3 t baking powder
- ½ t baking soda
- ½ t salt
- 1 C butter
- 1 C sugar
- 2 eggs
- 1 t vanilla (or almond extract)
- Sugar
Sift together flour, baking powder, baking soda and salt; set aside.
Cream butter for 1 minute. Add 1 C sugar and beat until light and fluffy (about 4 minutes). Add eggs, one at a time, beating well after each addition (total of 2 minutes). Add vanilla.
Gradually stir dry ingredients into creamed mixture, mixing well but don’t over-mix.
Place dough in bowl, cover with plastic wrap and refrigerate for at least 1 hour.
Remove dough from refrigerator and roll out on a lightly floured surface to ¼ to ½ inch thickness. Cut with floured cookie cutter and place on ungreased baking sheets. Makes about 36 cookies (varies with the size of the cookie cutter).
Bake in 350 degrees oven ~9 minutes.
Cool completely and frost.
Christmas Cookie Frosting:
- 3 egg whites
- 1 ½ t cream of tartar
- ½ t vanilla
- 4 C powdered sugar
Beat egg whites with cream of tartar and vanilla until foamy. Gradually beat in the sifted powdered sugar until the frosting stands in firm peaks (~5 minutes).
